Case 1 if the three phase supply has 4 wires 3 phase 1 nuetral or wye connection.

Please don t do that when powering all three elements from a single phase you probably need to rewire the return circuit inside the heater.

If you connect all three phases to a single phase you would probably overload your wiring as these are mostly rated at something like 3 to 4 kw.

If the generator is a 4 wire generator you can connect a single phase load between the neutral wire and any one phase wire.

I was wondering if there was a way to covert this to single phase.
This idea is not economic it would cost more to convert it safely than buying one or more single phase heaters either second hand or new to give the same heating effect 3 phase heaters are not.

Balanced 3 phase water heater.
There can be two cases here.
In balanced three phase wiring all the hot wires lines carry equal supply same magnitude of current and voltage.
You cannot convert a 3 phase generator to single phase.
This will give you single phased co.
